In addition to a wicked Mimosa and a giant bowl of seasonal fruit, one of my favorite things to serve at Sunday Brunch is a yummy batch of freshly baked muffins. Always a crowd pleaser, muffins have the added benefit of freezing well, so I get to enjoy leftovers later (that is, if there are any!).
Of course, not all muffins are the same. And, while I do admit that I enjoy a good corn muffin, or even a pumpkin spice now and then, this muffin recipe is the best, most versatile, I’ve ever tried. It can easily incorporate any flavor you choose. Add a handful of blueberries. Toss in chocolate chips. Swirl with a bit of peanut butter. It’s the basis for any number of amazing combinations… and the only limit is your imagination.
Like all of my favorite recipes, this one is courtesy of my good friend Amanda. Not only is she an incredible cook, she can bake like she’s on the Great British Baking Show (and since she originally hails from Yorkshire, maybe someday she will showcase that talent!).
Below is the easy recipe and baking instructions. Hope you enjoy them!
Ingredients
- 2 cups flour
- ½ teaspoon salt
- 2 teaspoons baking power
- ¾ cup white sugar
- 2/3 cup orange juice
- ¼ vegetable oil (depending on your brand of flour, you may add just a smidge extra)
- 1 large egg
- Cinnamon sugar
- ¾ cup of your choice of chocolate chips, fruit, nuts (Note: do not overfill with fruit or muffins will be soggy)
Baking Instructions
- Pre-heat oven to 400 degrees
- Mix together wet ingredients
- Add dry ingredients and mix thoroughly (should be a little thicker than cake batter)
- Spoon mixture into paper muffin cups (or use silicone muffin trays). Do not overfill.
- Sprinkle generously with cinnamon sugar
- Bake at 400 degrees for 10-20 minutes (test with a toothpick, baking time is dependent on extra ingredients added)
- Remove from baking pan, cool on a rack
