Here’s the Big Soft Ginger Cookie Recipe You Need this WinterT.S. Eliot may have called April “the cruelest month” but for me, it’s February. The festivities of the holidays are far behind us and the enthusiasm of a new year just a memory, but there’s still plenty more cold, dark, wintry weather ahead (in fact, I just read that this week, New York will be colder than Alaska). Can’t move south? My personal solution is to simply curl up with a great book under a CozyThrow, put on a pot of tea, and enjoy a big soft ginger cookie!

According to PBS, flavorful ginger root, “was first cultivated in ancient China, where it was commonly used as a medical treatment. From there it spread to Europe via the Silk Road. During the Middle Ages it was favored as a spice…” And ginger cookies come in many forms. I love them all, from classic iced gingerbread (a holiday fave) to crisp gingersnaps (a fall staple). But a soft, chewy ginger cookie is my go-to comfort food all winter long.

The tried-and-true recipe below is from a dear friend who has been making these cookies for me longer than I care to admit! It’s a winner, every time. (Thank you, Mandy!) This recipe yields 2 dozen large cookies.

Here’s the Big Soft Ginger Cookie Recipe You Need this WinterIngredients:

  • 2 ¼ cups flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground gloves
  • ¼ teaspoon salt
  • ¾ cup butter (softened)
  • 1 cup sugar
  • 1 egg
  • ¼ cup molasses
  • 2 tablespoons sugar (set aside for rolling)

Baking Instructions:

  • In a large mixing bowl, beat butter and sugar until fluffy. Add egg and molasses and beat well.
  • In another bowl, stir together flour, spices, soda, and salt. Pour into beaten mixture and combine.
  • Shape dough into 1 ½ inch balls and roll in the sugar that you set aside. Please on an ungreased cookie sheet about 2 ½ inches apart.
  • Bake at 350 degrees for approximately 9-10 minutes (or until light brown) and puffy. Do not overbake!
  • Let stand on the cookie sheet for 2 minutes before transferring cookies to a wire rack for cooling.
